Ling's Spice Cake


Spice Cake Bread Pudding

Ling's Spice Cake

The leftovers make a wonderful "Bread" and Butter Pudding.

1.5 cups of AP flour, sifted with the following dry ingredients:
1/4 tsp nutmeg
1 tsp cinnamon
1/4 tsp cloves
1/8 tsp black pepper
1 tbsp cocoa
1/2 tsp. baking soda

Cream 1/2 cup + 1 tbsp butter with 1 cup of sugar, and add 2 eggs, mixing well after each one.

Alternate dry ingredients into butter with 1/2 cup buttermilk. Line loaf pan with parchment and oil sides, place in preheated 350 degree oven for approx. 55 minutes.

The caramel was just sugar, brandy, butter, salt and a bit of cream.
