This is one of those meals that I just winged. I went with the ingredients I had on hand. I wrote out the basic outline so I would remember what I did. Amounts will vary depending on how many you are serving.
Greek Phyllo Wrapped Chicken

Roasted a red pepper and stuffed it along with some feta seasoned with green onion, garlic, kalamat olives, fresh dill,egg, salt and pepper, and some baby spinach leaves into a boneless chicken breast and wrapped in the phyllo.
